Apparently, it stays healthy for months. If you ever get tired of making new kombucha, you can simply let it sit.

The kombucha jar was stored around 69 °F (20 °C) during these 5 months. The tea was a mixture of half green and half black. I never added any new tea or sugar to it. No second fermentation was done this time or in the cycles before.

I did not have the intention of reusing it again, just got tired of it.

If you are interested in taking a break from brewing kombucha then the best thing would probably be if you made your own experiences. That means storing some kombucha away while you are still working with other jars as normal. That way you can practice storing them without any risk of loss. And experiment with different techniques until you find what works for you and requires the least amount of attention during the time off period.
